Tonight I glanced at the counter and saw that there were some ripe (almost overripe) peaches sitting there. Peaches are one of my favorite fruit, and as I was about to grill some salmon, I decided to grill the peach as well for dessert. I cut the peach in half and drizzled olive oil on the cut side. I then placed the cut side onto the grill and grilled it for 3-4 minutes. As I took the peach off the grill, the skin slipped right off. I topped the peach with a fig balsamic vinegar and it was delicious. A perfect summer treat!
